Midsummer Cake


Thorskegga Thorn, Thorshof

Ingredients

1lb Oatmeal

2oz Crystalised Ginger

1lb Plain Flour

Pinch of Saffron

1lb Sugar

1lb Honey

2 tsp Baking Powder

12oz Butter

2 tsp Mixed Spice

You need a really big mixing bowl and a large deep baking tin. Mix the ingredients together to make a stiff dough. Spread it over the base of the tin as you would for a flapjack cake. Cook it in a moderate oven for about 20 minutes until golden brown on the top. Alternatively you could use this mix to make cookies which would take 10 - 15 minutes to cook.
