Welsh cakes are traditionally cooked on a griddle. They are normally eaten cold served with butter and jam but they are much tastier hot from the pan. They are easy to cook over a camp fire or can be cooked in a greased frying pan.
Ingredients
| 8oz Self-raising flour | 1 egg |
| 3oz Butter or margarine | Milk |
| 3oz Sugar | 1/2 spoon Cinnamon |
| 3oz Currants |
Mix the dry ingredients and rub in the butter. Beat the egg and mix it in, then add a small quantity of milk to make a stiff dough.
Either roll out the dough and cut out the cakes with a round cookie cutter or shape it into flat discs (much easier!). Cook the cakes over a medium heat and turn them so they cook evenly. They are ready when they are brown on both sides.
